Eggplant Parmesan Sandwich Recipe

Heart Healthy Recipe
These delicious sandwiches have everything you need in a meal - protein, whole grains and healthy fat. They are easy to prepare, and even your kids will enjoy them.

Ingredients

    • 1/2 small eggplant, skin on
    • 1/4 cup egg substitute
    • 1/4 cup Italian bread crumbs
    • 1/2 cup no salt added tomato sauce
    • 2 oz fresh mozzarella
    • 6 fresh basil leaves, chopped
    • 2 whole wheat rolls
    • 2 tsp olive oil, divided
    • 2 Tbsp grated parmesan cheese
    • 1/2 sp oregano
    • 1/2 tsp garlic powder

Preparation

    • Preheat oven to 300°.
    • Cut eggplant into 1/4-inch thick slices. Dip into egg substitute and dredge in bread crumbs.
    • Coat baking sheet with cooking spray. Spritz eggplant with cooking spray, and bake for 20 minutes. Turn over and bake for an additional 20 minutes.
    • Cover eggplant with tomato sauce. Then place fresh mozzarella atop tomato sauce and place fresh chopped basil on top of cheese. Broil for an additional 3-5 minutes until the cheese is entirely melted.
    • While eggplant is broiling, spread olive oil over roll, and sprinkle parmesan cheese, oregano and garlic powder on top of rolls. Toast rolls until golden brown. Top with eggplant. Serve warm.
