Rosemary Chicken Dijon Recipe

Heart Healthy Recipe Diabetes Recipe
Serve this healthy, low fat chicken entrée. This quick and easy, baked chicken recipe is heart healthy. Pound the breasts flat before baking to speed up cooking time.

Ingredients

    • 2 Tbsp Dijon mustard
    • 2 Tbsp lemon juice
    • 1 to 2 garlic cloves, minced
    • 1 tsp dried rosemary or 4 fresh rosemary sprigs
    • Black pepper to taste
    • 2 skinless chicken breast halves (4 oz each)

Preparation

    • In a flat baking dish, combine all ingredients except the chicken. Add chicken, turning to coat well. Cover and marinate for 1 hour or overnight in refrigerator, or 20 minutes at room temperature.
    • Preheat oven to 375°. Cover and cook chicken approximately 25 minutes, or until cooked through.
